By day, the estate’s fortress-like entrance is softened by swathes of native grasses. At night it’s dramatically lit. Inside, generously spaced tables, sympathetic acoustics and seamless service further enhance the sense of occasion. Port Phillip’s fixed-price menu applies contemporary techniques to top-quality produce sourced from small local suppliers and those from further afield. Juicy quartered Tasmanian quail partners halved green grapes, blueberries, hazelnuts and leek glistening in verjuice. Ruby-coloured tuna sashimi is enlivened with peas and fresh Main Ridge chevre. A tri-tip cut of wagyu is carefully matched with beetroot and carrot roasted to sublime sweetness in duck fat. To finish charred pineapple is paired with gingerbread shards and chia seed mousse, a visual and textural treat. Little touches add polish, like a choice bread selection, biscuits with coffee and timely wine advise. The cellar door offers a more relaxed lunch menu Saturday to Tuesday.

Pull up to Port Phillip Estate and you're met with a building worthy of a Bond villian. A stark rammed-earth wall with an automated door lures you in and reveals the most stunning coastal view that Red Hill has to offer: vineyard in the foreground, Phillip Island in the distance. The menu is well executed with a focus on reputable producers. Aylesbury duck breast is matched with duck sausage and citrus gel, while Queensland spanner crab has a crustacean crumble to keep you in tune with the seaside vista. Borrowdale free-range pork is teamed with morcilla and a coffee-beer sauce. Wines from both Port Phillip Estate and Kooyong are championed here, but the list looks further afield with Old World additions. Desserts, like a deconstructed pavlova are satisfying but nothing eclipses the amazing view, attentive service, and dazzling interior design. It's a snapshot of everything great the Morningotn Peninsula has to offer.
